ASSORTED MUSHROOM & SPINACH STIR FRY

Simple dinner accompaniment.

You will need:
Baby spinach
Onion
Assorted mushrooms
salt, pepper and minced garlic and oil of choice
Simple and quick, and very healthy accompaniment for soup, grilled meat or a sandwich.
Fresh spinach, especially baby spinach makes all the difference. The bitter taste often associated with spinach is easily avoided if you use fresh, tender spinach. It will need to cook for less time and tastes much better.
I love to use assorted mushroom with this recipe as the tastes are so simple, that you can taste the subtle differences in the variety of mushrooms. Basic flavours of garlic, spinach and mushrooms all shine through. I love a blend of shiitake, portobello and button.
It is important to cook with a light hand. Sauté everything briefly, until just cooked through.
Stir lightly and occasionally to leave the delicate mushrooms and flavours intact.
A big bowl of this dish is very satisfying if you are looking for a gluten-free meal.
Recipe:
Ingredients:
1 onion, sliced fine
2 cups baby spinach
1 cup assorted mushrooms, cleaned and trimmed
1 large clove garlic, minced
1 tbsp oil of choice
Salt and Pepper to taste
Method:
Heat oil in a wok. When hot, add minced garlic and cook briefly.
Add sliced onions and mushrooms and cook till tender.
Add salt and mushrooms and stir frequently
Add spinach and cook till spinach just begins to wilt.
Enjoy warm!
