APPLE, BEETROOT AND CARROT JUICE

ABC - cant go wrong, and very fresh!
You will need:
Beetroot
Apple
Carrot
Ginger
Lime
All poured over ice...
Basic, fresh and full of healthy goodness. This juice makes for a great addition to the breakfast table too. Juice can be blended in a vita-mix where it retains all the fibre and fuss, making it a full body juice closer to a smoothie, or you may choose to blend it and sieve it, to make it a light but still healthy juice. I would not throw the pulp away, as it full of taste and health.
Ginger and Lime add a touch of freshness and elevate the juice to quite another level.
I use the pulp to make baked beetroot lavash, or add it to the dough for beetroot - bajra flatbread.
I love this juice chilled, and served over ice, with a sprig or two of fresh spearmint leaves.
Recipe
Ingredients
1 medium beetroot : Peeled and diced
1/2 apple : peeled, core and seeds removed
1 carrot : peeled and diced
1.5" ginger root : peeled and roughly cut
Juice of 1/2 lime
Blend all the ingredients except the lemon juice. Add ice (optional)
If using a regular blender, seive the juice, and blend the pulp with a touch of water again and seive through. Keep the pulp aside if you wish to use it to make something else of it.
Pour juice over ice, add lemon juice and stir well.
Add a spring of peppermint leaf and enjoy.
