An easy recipe with all the flavours of an apple pie!

Simple and easy to prep, this dessert is completely out of fashion, and I can't fathom why.

With vanilla ice cream, I would pick this dessert over a chocolate cake any day of the week. In fact, I can see this being a great left-over breakfast!


Apples are available at all times of the year and are very easy to cook. Even if they are a bit under, there's no harm done. Apples, with a generous splash of cinnamon and sugar cooked in any way - is a match made in heaven.


I usually end up having this with vanilla ice cream and/or caramel sauce, so I do not add vanilla to the bake it self. But for a tasty version by itself, adding vanilla would be a good idea.


As with all fruits and vegetables, make sure to slice or dice the apples to the same size. Carefully peel and core. Rest really is very easy!


If you want to prep this dish and cook it just before serving, let the baked apples cool before evenly adding the crisp mix. Refrigerate and take out of the fridge 15 mins before baking.

Recipe:

Ingredients:

For the apple mix:

5 medium apples, peeled, cored and thinly sliced

1/2 cup white sugar ( granulated)

1 1/2 tbsp all purpose flour / oat flour

1 tbsp cinnamon

1/4 cup water

1/2 tsp vanilla extract ( optional)


For the crisp:

1/2 cup quick cooking oats

1/2 cup all purpose flour / oat flour

1/2 cup packed brown sugar

1/8 tsp baking powder

1/8 tsp baking soda

1 tsp cinnamon (optional)

1/4 cup butter, cold and diced


Method:

Preheat the oven at 100 degrees C

Mix the ingredients for the apple mix well, and arrange the apples slices in a baking tray or ovenproof dish

Cook for 15 - 20 mins in the oven.

Meanwhile, sift and mix all the flour, baking powder, baking soda, cinnamon.

Mix in sugar and oats.

Roughly mix the butter through the oats mixture. Use melted butter, but do not heat it too much.


Spread evenly over apples mixture from the oven.


Bake for 35- 45 mins in a preheated oven, at 150 degrees C or till the top is crispy and golden.


If you want to prep the dish in advance, but serve the apple crisp warm straight from the oven, let the baked apples cool completely before spreading the crisp mix. Refrigerate to keep the butter cold. Remove from the fridge 15 mins before baking. Bake for 45 - 50 mins till the top is golden and crisp.
