CHIA-CHOCOLATE PUDDING

Rich and Smooth...a favourite no bake dessert that always hits the spot!

You will need:

Chia Seeds

Cocoa

Dark Chocolate chips

Vanilla extract (optional)

Milk of choice


This Pudding has just the right consistency, without the lumpy texture one often encounters in chia puddings.


The trick is using chia seeds that have been freshly ground. A coffee, spice or even a good old regular blender works. Most people think of chia seeds are black, but the come in various colours from black to white to various combinations in between. I like to use organic black seeds for this recipe. Black lends itslef quite well to the colour, making it rich and dark.

Seeds, once ground, may form clumps. Use a fork to separate them out or run them through a large sieve.


Almond milk makes a perfect base for this healthy dessert. It has a beautiful and nutty texture and flavour that lends itself vey well to the pudding. Coconut milk is also a great option - be sure to use a thick version to avoid a sloppy pudding.


Use a dark sweetened cocoa powder, combined with a rich dark chocolate. Chocolate needs to be broken down in fine shavings to allow to mix well as we will not be heating this dessert at all.


For a sweeter version, you could add a natural sweetener such as honey or fine granulated sugar to taste.

Recipe:

Ingredients:

2 tbsp chia seeds

1 cup milk of choice ( regular, coconut or almond)

2 tbsp cocoa

2 tbsp grated chocolate + extra for topping

1 tsp vanilla extract (optional)


Method:

Grind the Chia seeds in a vita-mix or blender. If you find the seeds are lumped together, use a fork to separate them out.

Add milk, vanilla, chocolate shavings, cocoa and mix well. Pulse once or twice in the blender to ensure there are no clumps of chia seeds again.

Pour into serving glasses and refrigerate overnight to set.


Dress with flax seeds and chocolate shavings.
