Another fresh and wholesome salad featuring oranges, wisps of onion, almond slivers and a crunchy dressing of mixed seeds.

You will need

Oranges

Baby Spinach

White Onion

Roasted Almond slivers


Dressing: Olive Oil, Fine White Vinegar, salt, pepper, garlic and an array of seeds.


Lovely juicy oranges define this salad, in colour, in taste and in texture. The silky orange segment without the peel and pith just melts in the mouth. It is important to get rid of as much of the fibrous covering as you can, while leaving the orange segment as intact as possible! This is the only tough part of this salad...


Tender Baby Spinach leaves are ideal for this salad. Bright and green it forms the ideal base for the salad.


White Onion works best as they are a bit less tangy, but red ones will also do the trick. Either ways, they need to be very finely sliced, almost paper thin. A mandolin is just the thing if your skills with a knife are not there yet.


The salad is incomplete without the roasted Almond slivers. I like to sliver the almonds and roast them well, but I would not hesitate to pick up a good pack of ready ones. It is very versatile, once in your pantry shelf.


The dressing comes alive with all the mixed nuts and seeds - and now is not the time to shy away from variety. I throw in roasted watermelon, flax, sunflower, chia, black and white sesame. Just fill in the ingredients in a glass bottle and give it a good shake before dressing the salad. Don't forget to be generous with the seeds. This dressing stores well up to a few days in the fridge.

The crunch and wholesomeness the dressing gives the salad is unbelievable.

Recipe

Ingredients

Salad Base:

2 oranges worth of segments, with peel and pith removed

1 small white onion

4 cups of baby spinach

1/2 cup Roasted Almond Slivers


Dressing:

3/4 cup Olive Oil

3 tbspn vinegar

Pinch of salt and pepper

1 clove minced garlic

1/2 cup mixed seeds

1/4 cup water


Method:

Mix all the salad ingredients in a large salad bowl

Mix all the dressing ingredients in a glass jar or bottle, and give it a good shake.


Toss the salad lightly, and generously drizzle the dressing, making sure all the seeds are well mixed.
