MUSHROOM, SWEET ONION AND BRIE FLATBREAD

Beautiful flavours, taste lovely both made as a bite-size appetiser or meal.

You will need:

Pizza dough or ready pizza base

Mushrooms

Balsamic vinegar

Garlic

Onions

Sugar

Brie

Salt and pepper


Balsamic grilled mushrooms and caramelised onions are a match made in heaven. Add them onto a flatbread with brie, and it simply goes a step beyond.


Fresh pizza dough soaks up the flavours and tastes much better than ready pizza crust. Classic pizza dough can be made bite size or full pizza size depending on when you want to serve it.


The mushrooms are cooked with garlic and olive oil and left to rest. Onions caramelised with sugar to add to the sweetness. A dash of honey can also be used for the same. If you like these flavours, do look up the fold-over recipe for a healthier alternative.


If you are using fresh pizza dough, dust the baking tray with oil and flour. Roll out the dough to the required consistency and bake halfway through. Remove from heat, layer with mushrooms and onions and bake again for a while before adding the brie. Bake till brie is melted.


Use a variety of mushrooms if available. Button, Porcini, Shiitake and Enoki, all make a good mix. Cook them briefly with minced garlic and olive oil. Add a splash of balsamic vinegar when they have cooled.


Usually, I caramelise the onions and love them using their own inherent sweetness, but in this recipe, I do like to add honey, or maple syrup or even sugar to enhance the flavours.


Feta is also a fine alternative. Feta is saltier and bakes firm, so you may need to add less salt to the overall recipe and use more feta.


For a quick fix, this mix can also be served on crackers and toasted in the oven for a few minutes.

Recipe:

Ingredients:

1 cup assorted mushrooms, sliced

1 tbsp balsamic vinegar

2 tsp minced garlic

1/2 cup sliced onions

1 tsp sugar

Pizza dough or crust

1/2 cup brie, sliced

Salt and pepper to taste


Method:

Heat oil in a pan and cook onions until brown and caramelized. Add sugar, and let them turn brown. Remove from the pan and let cool.

In the same pan, cook mushrooms in oil till sweating and fragrant. Add minced garlic and pepper. Remove mushrooms from heat and set aside.

Add balsamic vinegar to mushrooms and let rest.

Prepare the tray with pizza dough and bake halfway through for 15 mins at 200C

Evenly distribute the mushrooms and onions on the dough. Spoon the remaining liquid evenly as well.

Bake till the crust is cooked through. Add sliced brie and bake till it melts.

Serve hot.


This can also be made bite size.

For a sweeter touch, drizzle some honey on the flatbread and serve.
