WHIPPED FETA DIP WITH HONEY

You will need:

Feta cheese

Greek yogurt

Pepper

Minced Garlic

Cream cheese

Chives


This is a lovely creamy dip that goes well with most anything. Lay it out with apple slices, celery, carrot slices, wheat thins, pita chips or good old potato crisps. The sweet and savoury is perfectly blended in the creamy texture. It takes a few minutes to make and can be prepared a day in advance as well.


Use natural honey to get the best flavours out. A lot of the commercial honey brands have a high sugar content and are too sweet. Any natural honey will pair well.


While I like to use natural yogurt and drain the liquids through a muslin cloth and sieve, a thick greek yogurt or even sour cream will do. As these form the base of the dish, the subtle differences in all the tastes will come through, but they all taste great. So, work with flavours that your palette already loves.


The feta is whipped with a small quantity of cream cheese. Do not over whip the feta. We want the same salty flavour and taste to come through, while only changing the texture slightly. Cream cheese can be substituted with half portion of olive oil.

When mixing the whipped feta with the yogurt, fold it in gently.


I love adding toppings on my dips. Figs and pistachios are a favourite for this one. They take this sublime dip over to the next level.

Recipe:

Ingredients:

100g feta cheese

200g natural yogurt, drained or 100g greek yogurt

1 tbsp cream cheese

1 clove minced garlic

3 tbsp chives, sliced fine

1/4 cup honey

A pinch of pepper


Method:

With a whisk, gently whip feta and cream cheese.

Transfer to a bowl, add yogurt, pepper, garlic and half the chives and fold in gently.

In a serving bowl, transfer the whipped feta mix, and hollow out the center.

Keep chilled. When ready to serve, fill the center with honey.

Dust with pepper and left over chives.

Top with finely cut dried fig and pistachios.
