OAT AND BANANA PANCAKES

Golden and crisp on the outside, sweet and soft on the inside...

You will need:
Banana
Oats
Cinnamon powder
Water or choice of milk
Butter
Salt
Oat & Banana pancakes are deliciously easy to make and one can rarely go wrong with it.
Bananas caramelise slowly making the pancake surprisingly crisp on the outside with a soft, but not gooey centre. Bananas also lend a sweetness to the pancake that doesn't require additional sugar or honey. Bananas need not be over ripe, but ripe enough to mash with a fork. Under-ripe bananas will not lend a soft base to the batter and may taste a bit odd. While I harbour no soft spot for over ripe, soft bananas - under ripe ones surely aren't for this recipe.
Cinnamon powder, honey, raisins, powdered nutmeg, chopped roasted walnuts can all be added in the batter for additional flavour, but a plain banana and oats pancake is also delicious.
Soaking the oats allows the oats to melt in to the batter making a smooth, yet textured batter. Water or choice of milk such as almond or regular full fat milk all work great.
Cooking the pancake in butter helps caramelise the banana to get a crisp and sweet outer layer. It does take sometime to cook, so be patient as all the flavours come together while it cooks.
Recipe:
Ingredients:
One banana
4 tbsp rolled oats
3 tbsp milk of choice or water
Pinch of salt
1/4 tsp cinnamon powder
1/4 tsp nutmeg powder (optional)
Method:
Mash a peeled banana in a bowl.
Soak oats and mashed banana in milk or water.
Add salt, cinnamon and nutmeg
Mix well and let sit for 15-20 mins at least.
In a pan, melt butter and add the mixture to the pan. If you are including nuts or raisins, add them to the batter just before pouring into the pan. Cook but do not cover.
It will not lift off like a regular pancake until the banana and oats are thoroughly cooked, so wait till the edges are brown and crispy. It does take some time.
Flip the pancake and cook through on both sides.
Enjoy with a drizzle of caramel sauce or a dollop of cream!
