PEACH-COCONUT SMOOTHIE

Surprisingly refreshing and healthy.

You will need:
Coconut milk
Peaches
Cinnamon powder
Honey or granulated sugar
Vanilla
Ice
This is a simple, fresh smoothie that comes very close to a summer dessert. It is a perfect accompaniment for a breakfast spread or as an afternoon drink.
The ingredients are simple and basic and lend themselves very well to this drink. If you want to stay off sugar, add honey instead. It is completely satisfying and will soon be a favourite.
I have only ever tried this with fresh peaches, but I am pretty sure frozen will do just as well.
If you want to make this a breakfast smoothie, add some soaked rolled oats. For a thicker more wholesome texture sunflower seeds soaked overnight can also be added.
For most smoothies, your choice of milk would work (almond, dairy free, low fat, yogurt) but in this one, I would not change the coconut milk for anything. It is completely essential to the taste.

Ingredients:
1 cup coconut milk
1 large peach, peeled and deseeded, roughly cut
1/2 tsp cinnamon powder
1/2 tsp vanilla extract
2 tbsp honey or sugar
1/4 cup ice
Blend all the ingredients till smooth, and serve!
