SHAKSHUKA INSPIRED EGGS

One pan meal, extremely versatile in flavours!

You will need:

Eggs

Diced Tomato

Diced Onion

Minced Garlic

Salt

Pepper

Crushed Chilli Pepper

Shredded Cheese

Green Chilies


These are the basic ingredients for this dish. What makes it so versatile are the additions you can make to this delicious recipe. For a vegetarian version you can choose from mushrooms, peppers, boiled potatoes, chickpeas, baked beans and broccoli. For a more meaty version one can add sausages, boiled chicken, diced chicken breast, ham or bacon. Feel free to chose a few of the ingredients, or whatever you have on hand.


This is a dish which is layered - with a juicy tomato base, layered with either vegetables, meat or both and topped with lovely sunshine eggs - and its all cooked in one pan!


The tomatoes need to cook really well. Adding salt early on allows for the tomato to release all its juices which cook and flavour the dish. Fresh herbs or dried herbs are both a great addition.

Don't dry up the tomato mix early on, add the middle layer of veggies or meat and then cook till all extra juices are dry.


A good way to ensure that the egg yolks don't break, is to break the egg in a bowl and transfer onto the hot pan.


This recipe has a lot of heat from the red crushed chillies, chopped fresh green chilies and freshly crushed black pepper. If want to turn the heat down, but still keep the flavours, remove the sees from the green chillies. Add the crushed black pepper last and reduce the amount of crushed red chilli pepper.


This is a perfect dish to put out for brunch. Paired with garlic bread and a thick curd dip, it totally is a sunday favourite.


Recipe:

Ingredients:

4 Eggs

1 cup diced tomatoes

1/2 cup diced onion

2 cloves minced garlic

1 tsp salt

1/2 tsp crushed fresh pepper

1 tsp crushed chilli pepper

1/2 cup shredded cheese

4 green chilies- seeded and sliced fine

2 tbsp Oil of choice

Herbs of choice - dried or fresh basil and oregano.


Dice the additional vegetables and meat into 1" cubes


Method:

In a pan, heat oil. Add onions, tomatoes, minced garlic and salt. As the mixture begins to simmer, add the herbs and crushed red chilli pepper. Cover the pan and cook until soft and juicy.

If the mixture gets dry, add some water.

Add the vegetables and meat. If adding both, add the meat first, let it cook for a while, and then add the vegetables. Cook until vegetables are tender but not too soft.

Mix thoroughly and pat down with spatula to form a thick base layer.

Pour cracked eggs over the mixture. Ensure to leave some space between the yolks.

Cover and cook till eggs are semi cooked.

Sprinkle salt and cheese. Cook a few more minutes, covered.

Sprinkle green chillies, crushed black pepper. Cover and cook till eggs are cooked.

The egg white should be cooked through, and the egg yolks should be just cooked.

Turn off the stove, cover the pan and let the dish rest for a few minutes before serving.
