WATERMELON FETA SALAD

You will need:

Watermelon

Feta Cheese

Onion

Roasted Pine nuts


This salad, will transform the way you think about fruit in a salad. Small, juicy scoops of watermelon form a vivid base for the salad. Using a melon scoop enhances the aesthetic incredibly . If you don't have one, dicing the watermelon to equal size pieces will also work.

I like to leave the seeds in as they add to the overall texture, but feel free to take them off if thats your preference. Keep some of the juice from the watermelon to keep the salad moist.


Feta, for me, brings this salad together. I like to use feta in brine. It has a salty and creamy texture. A full fat feta cheese always, always wins in taste - but a low fat version will do just as well.


It is almost imperative to slice the onions paper thin. Using a mandolin for this is a good idea if you are not able to do so with a knife. Again, I prefer to use white onions that are not too large, and not too tangy.


Roasted Pine nuts, the crowning glory of this salad. Toss these on top just before serving. Avoid mixing them in earlier if it is possible. They taste so much better that way.

Recipe

Ingredients

One watermelon, flesh scooped or diced (you may choose to keep or remove the seeds), with some juice reserved.

One White onion, sliced paper thin

1/2 cup crumbled feta cheese

1/4 cup roasted pine nuts


Mix Watermelon, some juice, onion and feta in a large salad bowl.

Toss lightly, cover and cool.

When ready to serve, add roasted pine nuts and toss lightly again.
