BREAKFAST BOAT

Scrumptious breakfast bits baked in a soft French bread roll.

This takes all the ingredients of a big breakfast, and is stuffed in a fine, wide French bread roll. And what's great is that you don't really need to plan it! Whatever is on hand, can go straight in!


I haven't tried my hand (or patience) at baking bread yet, so am happy to use one from a bakery. A basic French roll, or multigrain roll works well. Ensure it is not a loaf with a hard crust, or it could get too hard when baked again.

The bread roll needs to be scooped out from the center, drizzled with olive oil or butter and toasted in the oven for 5-10 mins . This allows for the bread to get warm and melt the cheese and cook the eggs well.


The stuffing can be almost anything! My favourite version is cheese cubes, grilled sausages, caramelised onions and fresh eggs.

For a meat-free version, feta cheese cubes, caramelised onions, balsamic grilled mushrooms, spring onions, eggs are all great options( recipes for ingredients are in the balsamic mushroom fold-over)

If you don't want to use eggs, baked beans make a satisfying alternative.

Another options for a vegetarian stuffing is tomatoes, mozzarella cheese, basil and caramelised onions and baked beans.


It is important to precook the ingredients in the oven or by grilling them (like sausages, onions and mushrooms) to retain individual flavour. Season the individual ingredients while cooking separately. Cut the cheese in 1" cubes, so that it melts on the outside, but there's also a nice big chunk to bite into. I like to use a cheddar, but any cheese that works with the rest of the ingredients is great!


The rest is quite easy - arrange the ingredients in the bread cavity!

While arranging the ingredients the bread cavity, alternate the ingredients, and leave some place in which to break the eggs last.To make sure the egg yolk doesn't break, break the egg in bowl and slowly transfer to the space left. Be as creative as you wish while arranging, or make it quick and stuff them in!


Finally bake the boat till bread is crusty and eggs have cooked through. It takes about 15-20 mins at 150 depending on your oven.

Recipe:

Ingredients:

One roll soft French bread

5-6 sausages

1 onion, thinly sliced

Cheese cubes

3-4 eggs

Salt and Pepper for seasoning

Oil/butter to cook


Method:

Preheat oven to 150C

Scoop out the center of a bread, creating a boat, with a hollow center.

Brush with oil or butter and bake for 10 mins.

Prepare all the ingredients individually - grill sausages, cube the cheese, caramelise the onions.

In the warm bread, arrange all the ingredients. Alternate the ingredients and leave a bit of hollow space for the eggs. Layer cheese at the bottom and sides if possible.

Break each egg individually in a bowl and pour into the hollow space. (If using baked beans. do the same with baked beans.)

Bake till eggs are cooked through.
